Susan’s Famous Cheesecake

Ingredients

  1. Crust:
  2. - ¼ cup sugar
  3. - ¼ cup melted butter
  4. - ¼ cup sugar
  5. Filling:
  6. - Five 8 ounce packages cream cheese
  7. - 3 tablespoons flour
  8. - 1 ¾ cup sugar
  9. - 5 eggs
  10. - 2 egg yolks
  11. - ¾ teaspoon lemon peel
  12. - 2 tablespoons heavy cream

Preparation:

Make curst. Press into 10” spring form pan. Beat cheese until fluffy. Beat in sugar, flour, lemon peel, eggs and yolks. Stir in cream. Pour into pan. Prior to heating oven place a pan of water in bottom. Heat oven to 500 degrees, bake 10 minutes. Reduce heat to 200 degrees, bake one hour. Keep an eye on cake if browning too quickly, cover loosely with foil. Remove from oven and cool away from draft. Cake can be frozen. Just prior to serving, cut green tops off strawberries, place cut side down on cake in desired form. Melt apricot jam. Put through sieve and drizzle over strawberries.
