Pecan Tassies (Nane’s recipe)

Preheat oven to 350 degrees. Spray small muffin pan with Pam.

Crust:

  1. - 6 ounces cream cheese
  2. - 15 ounces butter
  3. - 2 cups flour
  4. - Dash of salt

Directions:

Cream butter and cream cheese together. Then add flour and salt. Roll into approximately 1 inch balls and place into mini muffin tin holes. Make into shells with thumbs.

Filling:

- 1 ¼ cups brown sugar
- 1 egg + 1 egg white
- 1 tablespoon melted butter
- 1 teaspoon vanilla

Beat eggs with a fork. Add sugar, butter and vanilla and mix well. (May need to occasionally stir while filling crusts).
Put 1 teaspoon chopped pecans into each cup with approximately 2 teaspoons filling. (Don’t fill too much – filling expands a little).
Bake at 350 degrees for 20 – 24 minutes or until crust is golden.
