Lace Cookies

Ingredients

  1. - 1 cup quick oats (not instant)
  2. - ¾ cup sugar
  3. - ½ teaspoon salt
  4. - 3 tablespoons flour
  5. - 1 stick margarine
  6. - 1 egg, slightly beaten
  7. - ½ teaspoon orange juice
  8. - 1 ½ teaspoons vanilla
  9. - 4 ounces chocolate chips

Preparation:

Preheat oven to 350 degrees. Line 2 cookie sheets with foil. Mix dry ingredients. Melt one stick of margarine. Add dry ingredients. Add egg, juice and vanilla. Drop scant teaspoon of batter 2” apart on sheets. Bake 8-10 minutes. Remove foil from cookie sheets. Cook cookies completely. Melt chocolate. Spread small amount of chocolate on cookie, top with another cookie. This recipe can be doubled.
