BLT Pasta

This tastes great fresh although it holds up well as leftovers the day after.

Ingredients

  1. - 1 package (1 pound) wagon wheel pasta or whatever kind
  2. - 1 package (1 pound) bacon, cooked, drained and crumbled
  3. - 4 ripe plum plumb tomatoes, halved and sliced
  4. - 3 cups romaine lettuce
  5. - ½ cup mayonnaise
  6. - 2 tablespoons cider vinegar
  7. - 1 teaspoon sugar
  8. - ½ teaspoon salt
  9. - ¼ teaspoon pepper

Directions:

1. Cook pasta according to package directions.
2. Rinse under cold water, drain, and transfer to large bow.
3. Add bacon, tomatoes and lettuce.
4. In a small bowl, whisk together mayonnaise, vinegar, sugar, salt and pepper.
5. Toss mayonnaise mixture with pasta and serve immediately.
