Taco Dip Shenanigans

I started here as a student worker in 2008. As a student worker for the Advancement Services Team for about 2 years I felt as though these special people were my second family! We would all bring in treats and snacks to share. My contribution was this yummy Taco Dip that quickly became “our signature dish”. Now for all Birthdays, Special Occasions and even just because, this dip is consumed 2-3 times a month! Upon graduation I was hired gull time into the team and since have been promoted and now I work for another department, but our Taco Dip Traditions shall NOT be forgotten and WILL continue…


  1. - 1 can of refried beans
  2. - 1 taco packet
  3. - 1 can of black olives (pre-chopped)
  4. - 1 large tomato
  5. - 1 jar salsa
  6. - 1 container of sour cream
  7. - 1 ½ cup of shredded lettuce
  8. - 1 bag of shredded taco cheese (about 2 cups)
  9. - 1 bag of Tostitos Chips


1. In a bowl mix the refried beans and the taco packet
2. Smooth the refried bean mixture into the bottom of a 13 x 9 baking dish
3. Layer the shredded lettuce, olives, diced tomatoes, salsa, sour cream and shredded cheese
4. Cover and refrigerate for 4 hours (overnight is best!)
5. Enjoy!!!
