Raspberry Streusel Bars

 350 degree oven     8 inch square dish (no need to grease)
                        

Ingredients

  1. - 1 ¼ cups quick oats, uncooked
  2. - 1 ¼ cups all-purpose flour
  3. - ½ cup firmly packed brown sugar
  4. - 1 teaspoon baking powder
  5. - ¼ teaspoon salt, optional
  6. - 1 ¾ sticks of butter, melted
  7. - 1 cup of raspberry jam or preserves
  8. - ¾ cups of white chocolate chip divided
  9. - ¼ cups almonds

Directions:

Preheat oven to 350 degrees. Combine oats, flour, brown sugar and baking powder. Stir in melted butter until mixture is crumbly. Reserve 1 cup of mixture. Press remaining mixture into bottom of dish, Bake 10 minutes.
Spread raspberry jam evenly over baked crust to within ¼ inch of edges. Spread with ½ cup of white chips. Combine remaining crumb mixture with the remaining chips and almonds. Sprinkle over fruit mixture, pressing lightly into fruit.
Bake 30-35 minutes or until golden brown. Cool completely.
