Orange-Cocoanut Muffins

Makes 12 muffins. Use muffin papers or grease cups.
Bake 375 degrees for 18-21 minutes.

Ingredients

  1. - 1 ½ cups flour
  2. - ¼ cup sugar
  3. - 1 ½ teaspoon baking powder
  4. - ½ teaspoon baking soda
  5. - ½ teaspoon salt (optional)
  6. - 1/3 cup orange juice
  7. - ¼ cup melted butter or margarine
  8. - 1 egg
  9. - 1 can (11 oz.) mandarin oranges drained

Topping

  1. 1/3 cup sweetened flaked cocoanut
  2. ¼ cup sugar
  3. 1 tablespoon margarine or butter-room temperature
  4. ½ teaspoon grated orange rind

Directions:

Mix flour, sugar, baking powder and baking soda in bowl. Add orange juice and mix evenly. Add orange sections. Mix carefully. Spoon into muffin cups about ½ cup each.

Topping:

Mix cocoanut, butter, sugar and rind together and sprinkle over top of muffins.
Bake 18-21 minutes until cooked. Let stand about 5 minutes before removing from muffin pan.
Now…I just tried making a coffee cake with this recipe. I used a greased 9x9 inch baking pan. When cooled, cut into 12 sections.
