Almond Apricot Bars

All the recipes are just great. They smell good while baking and even taste as good as they smell. All are easy and folks just love them.


  1. - 2 cups vanilla or white chocolate chips, divided.
  2. - ½ cup butter, softened
  3. - ½ cup sugar
  4. - 2 eggs
  5. - 1 teaspoon vanilla extract
  6. - 1 cup all-purpose flour
  7. - ¾ cup apricot jam (You can use any sort of jam. I have used raspberry in the past.)
  8. - ½ cup sliced almonds (optional)


Preheat oven to 235 degrees and grease 8 inch square baking dish
1. Melt 1 cup of the chips and set aside. Mix together butter and sugar. Add eggs. Beat in vanilla and melted chips. Gradually beat in flour. Spread half of the batter into dish and bake at 325 degrees for 15-20 minutes or until golden brown. Spread with jam.
2. Stir remaining chips into remaining batter. Drop by tablespoons over jam. Carefully spread over top. Sprinkle with almonds.
3. Bake for 30-35 minutes.
